Cooked down, the natural sugars of this bulb vegetable offer a delicious sweet-leaning infusion while remaining firmly fixed in the savory realm.

Yield: (1) 750ML Bottle or (16) 1.5fl oz Servings
Approx. Ending ABV: 30%

Steps:

  1. Peel, slice and caramelize 1 red onion.  Season to taste and add depth to the final infusion.  Allow to cool in the pan.
  2. Combine 7 oz of cooked (and cooled) caramelized red onion with 14 fl oz of High Proof Spirit  (14fl oz = 343g).  Seal tight and let sit for 1-3 days.
  3. Strain onions from infused spirit.   Press the onions best you can to extract any last drops of liquid.  It is recommended that you coffee filter this infusion to remove some of the oils carried over as a result of the cooking.  If you skip this extra filtration, your infusion will taste fine, though it may have an oily mouth feel.    You should have approximately 12 fl oz of caramelized red onion infused spirit.
  4. Mix 12 fl oz of caramelized red onion infused spirit with 12 fl oz of filtered water and 1 fl oz of simple syrup.  The ½ part of simple syrup rounds out the overall flavor of final infusion.   Bottle your finished lemon infused vodka in your favorite glass bottle.  Sealed tightly and kept cold, your infusion should last 3-4 weeks.

Noteworthy Notes:

  • Don’t be shy when seasoning your onions while they cook.  Make them delicious to eat and that will translate into a great flavored infusion.
Scaling:

Cocktail: Gibson’s Revolution

Ingredients:

  • 3 fl oz Caramelized Red Onion Infused Vodka
  •  4 fl oz Bloody Mary Mix
  • Cocktail Onions, Garnish

Steps:

  1. Build caramelized red onion infused vodka and blood Mary mix in a pint glass filled with fresh ice.
  2. Season to taste, though try it without additional seasoning first.
  3. Garnish with a skewer of 3 cocktail onions.
